Sinabawang manok

SINABAWANG MANOK is a comforting Filipino chicken soup that is perfect for cold or rainy days. To prepare this dish, start by cleaning and cutting the chicken into serving pieces, then slicing the onion, garlic, ginger, and vegetables such as sayote or green papaya. In a pot, heat a small amount of cooking oil and sauté the onion, ginger, and garlic until fragrant; you may also add sliced tomato for a richer flavor. Add the chicken pieces and cook until the meat turns white, then season with fish sauce or salt. Pour in enough water to cover the chicken and bring it to a boil, skimming off any foam for a clearer broth. Lower the heat and simmer for about 25–30 minutes until the chicken becomes tender. Add the sliced vegetables and cook until they are soft, followed by any leafy greens or vegetables you like that can be added to Sinabawang Manok, which only need a minute or two to wilt. Finally, adjust the seasoning with fish sauce, salt, or pepper according to taste. Serve the Sinabawang Manok hot, ideally with steamed rice, and enjoy its warmth and nourishment.
